An all-in-one glass pour-over vessel using thick bonded paper filters that produce a particularly clean, sediment-free cup with muted body.
The Chemex is as much a piece of design as it is a brewing instrument — its hourglass silhouette and wooden collar have been on display at the Museum of Modern Art since 1944. Its thick bonded paper filters absorb more oils and fine particles than standard filters, producing a cup that is almost tea-like in its clarity and cleanliness.
At Nerlu, the Chemex is reserved for coffees with delicate, complex flavour profiles where maximum clarity is desirable — washed lots with bright acidity, or naturals where we want the fruit notes to read clearly without the distraction of heavy body. We brew at a 1:16 ratio with a coarser grind than the V60, allowing for the slower flow rate imposed by the thicker filter.
